Sallys Corner - Chardonnay 2011

Sallys Corner

Sallys Corner - Chardonnay 2011

This current release has a pale gold colour and a delicate nose displaying stone fruit integrated with subtle oak. These characters follow through to the palate which is complex and balances beautifully with the natural acid of the cool climate fruit. Grapefruit and summer stonefruit predominate. This wine will gain further depth and complexity with good cellaring for up to 3 years. It is generally accepted that the finest chardonnays enjoy cool ripening conditions such as we have in the southern highlands

Technical information
The grapes were grown at the vineyard at Exeter . The fruit was harvested in early April at baumŽ 12.5 and was selectively hand picked. All parcels of grapes were barrel fermented in French oak barriques and underwent barrel stirring to mix the yeast lees through the wine. The aging on lees gives richness and mouth feel. The wine spent 9 months in French oak barrels of which only a small percentage was new to give the wine only a light oak flavour. The wine was bottled at 13% alchol.

Serving suggestions
This wine is fresh and crisp and is a great drink on its own. It is a good accompaniment to all types of sea food and will even partner lighter style of white meats. Or as an interesting alternative a ripe camembert with thinly sliced pear.
