Sallys Corner - Cabernet Merlot 2009
This wine is purple /red in colour and has aromas of raspberry and blackcurrant. It has medium body with leafy black fruit flavours on the palate. It has soft tannins is favoursome and gives a full mouth feel with a spicy element.
The grapes were grown in our vineyard at Exeter.The fruit was selectively handpicked in May. Cabernet by itself has a predominantly front of mouth feel and a little taste on the back palate. It has a gap in the mid palate called the “donut” so another wine, usually merlot, is blended to give the wine a whole of palate flavour. The wine was bottled at 13.8% alcohol. It was aged for about 10 months in French barriques (225l) which gives it a refinement of flavour and complexity.. It has a small sediment which is common for a wine of this age. If the wine is poured from the bottle you don’t drink the last mouthful of the last glass. The wine is 50% cabernet and 50% merlot.
This wine is clean and fresh. This wine goes well with all red meats especially lamb. It also is a good accompaniment with hard cheeses. Some people drink the wine by itself
