Artemis - Shiraz Viognier 2012

Artemis - Shiraz Viognier 2012

Rich cherry Purple in colour. This complex wine shows a vibrant nose of blueberry, plum, and blackberry and floral notes and fine French and Hungarian spicey oak. The palate displays ripe blackberry and cherry and white pepper balanced with medium acidity. The alcohol warmth lift the wine on the finish. The viognier provides a refreshing floral apricot character to the palate. A beautiful wine which will benefit from extended cellaring.
Winemakers Notes
The grapes were hand harvested on the 19th of April 2011 at 14.0 baume and de-stemmed without crushing via
gravity system into 2.5 tonne open fermenters. Following de-stemming the must was bled of 10% free run. The
grapes were inoculated with minimal amounts of select yeast.
Early day 5, the temperature peaked at 30 degrees Celsius. On day 7, fermentation was near completion.
Day 8, S.G = 0.994 and the must was pressed by vacuum press (via gravity system). Free run and pressings were
combined in stainless storage tanks and inoculated with malo-lactic bacteria.
After 3 weeks wine was lightly sulphured and racked to 50% new and 50% one and two year old Vicard
puncheons, Bossuet and Seguin Moreau barriques. Each barriques lees were stirred monthly on minimal
sedimentation and racked lightly after six months. Following time in oak the wine was coarsely filtered (approx 4
micron) and bottled in May 2014.
