Artemis - Last Leaf Sauvignon Blanc 2011
Yellow to yellow gold in palate. The nose displays honey and ripe floral notes. The palate is fine with a firm sharp acid thread lifting this delicious sweet wine and adding to a complex finish of spice, candied orange and ripe pineapple. The finish is long and fine. Very well made.

Winemakers Notes.The cane pruned Sauvignon Blanc grapes were picked on the 28th of April at 15 baume crushed and allowed to soak for 16 hours and then pressed by membrane vacuum press and allowed to settle for two days at 0 degrees Celsius with minimal enzyme addition.
The juice was then freeze concentrated over a period of 8 weeks and racked of ice intermittently over this time to concentrate the juice to 25 baume.
The resultant clear juice parcels were then racked with some fine lees to 100% new Kadar Hungarian barriques. Fermentation was carried out at 12 degrees Celsius for 40 days and allowed to age for 2 years.
The wine was then protein stabilised and allowed to cold stabilise at minus 2 degrees Celsius for 2.5 months then sterile
filtered and bottled.
Winemakers notes.The 2014 vintage was a great vintage for Riesling only minimal botrytis was present despite some
weeks of wet weather prior to harvest. Excellent flavour ripeness was achieved at low baume and firm
acidity. The grapes were hand harvested between the 28th of March and 5h of April at between 10.5
and 11.5 baume.
The grapes were crushed and immediately pressed by membrane vacuum press and allowed to settle
for two days at 0 degrees Celsius.
The resultant clear juice was racked with some fine lees.
Fermentation was carried out at 13 degrees Celsius for 18 days.
The wine was then protein stabilised and allowed to cold stabilise at minus 2 degrees Celsius for 2.5
months then sterile filtered and bottled.
